Description
Caramelized Butternut Squash with Brown Sugar is a sweet, buttery, and savory side dish that’s perfect for fall and winter meals. Roasted to perfection, this easy recipe transforms simple squash into something truly comforting.
Ingredients
- 1/4 tbsp salt
- 1/4 cup brown sugar
- 3 tbsp butter (I like Kerrygold unsalted butter for this)
- 2 butternut squash (peeled and cut into 1-inch cubes)
Instructions
1. Preheat your oven to 400°F (200°C).
2. Cut off the ends of the butternut squash and discard them.
3. Peel each squash and cut in half lengthwise.
4. Scoop out the seeds and set aside if you plan to roast them later.
5. Cut the squash into 1-inch cubes.
6. Place the cubed squash on a baking sheet.
7. In a separate bowl, combine 2 tablespoons of melted butter, 1/4 cup of brown sugar, and 1/4 tablespoon of salt.
8. Pour the butter mixture over the cubed squash.
9. Toss the squash cubes with clean hands until fully coated.
10. Spread the squash in a single layer on the baking sheet.
11. Roast in the preheated oven for about 40 minutes.
12. Turn the squash a few times during roasting to ensure even browning.
13. Remove the squash from the oven once tender and caramelized.
14. Let the squash cool slightly before serving.
15. Serve warm as a sweet and savory side dish or enjoy as a snack.
Notes
You can reserve the butternut squash seeds and roast them separately as a crunchy topping or snack.
For deeper flavor, add a pinch of cinnamon or nutmeg to the butter mixture before roasting.
