1 large cantaloupe, peeled, seeded, and chopped
1 cucumber, seeded and chopped
1 shallot, peeled and chopped
1/3 to 2/3 cup water
Juice of 1 fresh lime
2 teaspoons sea salt
1/2 cup extra virgin olive oil
1/2 cup fresh blueberries
1/4 cup fresh basil leaves, torn


Instructions

Place the chopped cantaloupe, cucumber, shallot, lime juice, sea salt, and extra virgin olive oil into a blender.
Blend on high speed until the mixture is completely smooth and creamy.
Gradually add water a little at a time until you reach your desired soup consistency.
Pour the gazpacho into a large bowl or airtight container.
Refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill thoroughly.
