Description
This vibrant, chilled soup is the ultimate refreshing meal for hot summer days. By replacing the traditional tomato base with sweet, sun-ripened cantaloupe and balancing it with crisp cucumber, aromatic basil, and a pop of fresh blueberries, this gazpacho achieves a sophisticated, savory-sweet profile. It requires absolutely no stove time, making it a quick, healthy, and visually stunning appetizer or light lunch that brings a gourmet touch to your table with minimal effort.
Ingredients
1 large cantaloupe, peeled, seeded, and chopped
1 cucumber, seeded and chopped
1 shallot, peeled and chopped
1/3 to 2/3 cup water
Juice of 1 fresh lime
2 teaspoons sea salt
1/2 cup extra virgin olive oil
1/2 cup fresh blueberries
1/4 cup fresh basil leaves, torn
Instructions
Place the chopped cantaloupe, cucumber, shallot, lime juice, sea salt, and extra virgin olive oil into a blender.
Blend on high speed until the mixture is completely smooth and creamy.
Gradually add water a little at a time until you reach your desired soup consistency.
Pour the gazpacho into a large bowl or airtight container.
Refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill thoroughly.
Ladle the chilled soup into bowls.
Top each bowl with a garnish of fresh blueberries and torn basil leaves before serving.
Notes
For best flavor, use a very ripe cantaloupe. The soup can be stored in the refrigerator for up to 24 hours. Serve in chilled bowls for a professional presentation.
