A vibrant twist on classic potato salad, this Cajun version combines tender potatoes with a tangy, spiced dressing. Full of flavor and texture, it’s perfect for summer gatherings and family meals.
Ingredients
2 lbs waxy potatoes (like Yukon Gold), peeled and cubed
4 large eggs, hard-boiled and chopped
1/2 cup mayonnaise
2 tbsp sour cream
1 tbsp apple cider vinegar
2 cloves garlic, minced
1/2 red onion, finely chopped
2 stalks celery, diced
1/4 cup chopped green onions (scallions)
1 tbsp Cajun seasoning (paprika, cayenne pepper, garlic powder, onion powder, thyme, oregano)
1 tsp salt
1/2 tsp black pepper
Dried dill (optional, for garnish)
Instructions
Boil potatoes in salted water until tender (10-12 minutes), then drain and let cool.
In a large bowl, mash half the potatoes to thicken the dressing; add mayonnaise, sour cream, vinegar, garlic, Cajun seasoning, salt, and pepper. Mix until smooth.
Fold in cooled whole potatoes, eggs, red onion, celery, and green onions.
Refrigerate for 1-2 hours before serving. Garnish with dill if desired.
Notes
Use waxy potatoes for best texture. Adjust cayenne pepper for heat. Best served within 24-48 hours for peak freshness. For a tangier flavor, add 1 tbsp Dijon mustard to the dressing.
