  • 1 small cabbage, shredded
  • lbs ground beef or turkey
  • 1 large onion, chopped
  • ½ cup red bell pepper, chopped
  • 1 (15 oz) can diced tomatoes, undrained
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp sugar
  • 1 tsp caraway seeds (optional)
  • 1 (8 oz) can tomato sauce
  • 1 cup reduced-fat sour cream
  • 1 cup shredded Swiss cheese or preferred cheese

Instructions

1. Preheat oven to 350°F. Grease a 9×13 baking dish.

2. Layer shredded cabbage in the bottom of the dish.

3. In a skillet, brown the ground beef with onion and bell pepper. Drain any excess fat.

4. Stir in diced tomatoes, salt, pepper, sugar, and caraway seeds.

5. Spoon the beef mixture evenly over the cabbage in the baking dish.

6. In a bowl, mix the tomato sauce and sour cream together until smooth.

7. Spread the tomato sauce and sour cream mixture over the beef layer.

8. Cover the dish with foil and bake for 1 hour.

9. Uncover, sprinkle shredded cheese on top, and bake an additional 15–20 minutes until cheese is melted and bubbly.

10. Let the casserole rest for 10 minutes before serving.

Notes

You can substitute ground turkey for a lighter option.

Try cheddar or mozzarella if you don’t have Swiss cheese.

Caraway seeds add a subtle flavor but can be omitted if desired.
