Description

A vibrant, nourishing, and fast one-pan meal that perfectly highlights seasonal produce. This dish features tender, caramelized butternut squash seared to perfection and tossed with fresh, peppery baby spinach. Infused with aromatic garlic, shallots, and warm spices like cumin and paprika, it offers a sophisticated balance of earthy sweetness and bright flavor. Naturally vegan and gluten-free, this nutrient-dense skillet is the perfect solution for busy weeknights when you want a home-cooked, healthy meal with minimal cleanup.

Ingredients

Scale

1 tablespoon olive oil
1 shallot, finely diced
5 cups cubed butternut squash (approx. 1.5 lbs)
2 garlic cloves, minced
5 cups fresh baby spinach
0.5 teaspoon salt
0.5 teaspoon paprika
0.5 teaspoon ground cumin
1 tablespoon fresh lemon juice

Instructions

Heat the olive oil in a large skillet over medium heat.
Add the diced shallot and cook until translucent, about 2-3 minutes.
Add the cubed butternut squash, paprika, cumin, and salt to the skillet.
Cover the skillet with a lid and cook for 10-12 minutes, stirring occasionally, until the squash is fork-tender.
Remove the lid and add the minced garlic, sautéing for another 1-2 minutes until fragrant.
Fold in the fresh baby spinach and cook just until wilted, about 1-2 minutes.
Remove from heat, drizzle with fresh lemon juice, and serve immediately.

Notes

Ensure the butternut squash cubes are cut into uniform 1/2 inch pieces to guarantee even cooking. If you want extra texture, sprinkle with toasted pumpkin seeds or nutritional yeast before serving.
