Description

A quick and satisfying twist on buffalo chicken wings, featuring tender shredded chicken tossed in spicy buffalo sauce served over a creamy base of cottage cheese and fresh, crisp vegetables.

Ingredients

Scale

1 lb boneless, skinless chicken breasts (cooked and shredded)
2 tbsp buffalo sauce (adjust to taste)
1 cup cottage cheese (4% milk fat, unflavored)
2 tbsp ranch-style dressing (dairy-based)
1/4 cup finely chopped celery
1/4 cup finely chopped carrots
1 tbsp plain Greek yogurt (optional, for extra creaminess)
Lettuce or arugula (optional, for garnish)

Instructions

Cook chicken breasts in a skillet over medium heat until fully cooked; let cool and shred.
Combine shredded chicken with 2 tbsp buffalo sauce in a bowl and toss to coat.
In a separate bowl, mix cottage cheese with ranch-style dressing and Greek yogurt, if using.
Top the cottage cheese with the buffalo chicken mixture, finely chopped celery, carrots, and additional buffalo sauce if desired.
Serve chilled and enjoy!

Notes

Adjust spice level by adding more or less buffalo sauce.
For a lower-fat version, opt for low-fat cottage cheese and light ranch dressing.
Store leftovers in an airtight container in the refrigerator for up to 24 hours.
Use leftover cooked chicken for a faster version.
