Ingredients
- 2 boneless, skinless chicken breasts, grilled and sliced
- 1 pound penne pasta
- 2 cups cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
1. Boil the penne until al dente, drain, and set aside.
2. In a bowl, mix cherry tomatoes, red onion, garlic, and basil. Drizzle with balsamic vinegar and olive oil, season with salt and pepper, and toss well.
3. Heat the pasta and tomato mixture in a large skillet over medium heat, stirring gently to heat through.
4. Incorporate the grilled chicken slices into the skillet, mixing to ensure even distribution.
5. Dish the pasta into bowls and top generously with grated Parmesan cheese.
