Description
This refreshing broccoli grape salad is a delightful blend of earthy crunch and sweet, juicy pops of flavor. Featuring tender raw broccoli, halved red grapes, sharp red onion, and crunchy turkey bacon, it is pulled together with a tangy, creamy dressing. It is a perfect, stress-free side dish for potlucks or weeknight family meals, offering a vibrant way to enjoy fresh produce with minimal prep time.
Ingredients
6 oz turkey bacon, chopped and browned
1/4 cup pine nuts, toasted
1 lb broccoli crowns, cut into bite-sized florets
1/2 English cucumber, sliced into thin half-moons
1 1/2 cups red grapes, halved
1/4 cup red onion, finely diced
1/2 cup mayonnaise
2 Tbsp fresh lemon juice
1 Tbsp granulated sugar
Instructions
In a large bowl, whisk together the mayonnaise, lemon juice, and granulated sugar until smooth.
Add the broccoli florets, halved grapes, diced red onion, and cucumber slices to the bowl.
Toss the vegetables and fruit with the dressing until evenly coated.
Fold in the crispy browned turkey bacon and toasted pine nuts just before serving to maintain their crunch.
Serve immediately or refrigerate for up to 2 hours for a chilled salad.
Notes
You can substitute sunflower seeds for pine nuts to make the recipe more budget-friendly. For a vegetarian option, replace the turkey bacon with crispy roasted chickpeas. The salad holds up well in the refrigerator for a few hours, but add the nuts and bacon right before serving for the best texture.
