Ingredients
1½ pounds boneless skinless chicken breast, cut into 1-inch pieces
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 tablespoon olive oil
½ cup low-sodium soy sauce
½ cup apple juice (non-alcoholic bourbon substitute)
2 tablespoons brown sugar
1 teaspoon garlic, minced
½ teaspoon fresh ginger, grated
1 tablespoon cornstarch mixed with 2 tablespoons water
Optional: ½ teaspoon apple cider vinegar
Instructions
Season chicken with salt and pepper
Heat oil in a skillet over medium-high; sear chicken 3-4 minutes per side until browned
Add garlic and ginger; sauté 30 seconds
Add soy sauce, apple juice, sugar, and vinegar; bring to simmer
Reduce heat to medium; simmer 5 minutes
Stir in cornstarch slurry and cook 2-3 minutes until glossy
Optional: Broil 1-2 minutes for more caramelization
