Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks (canned or fresh)
- 1⁄4 cup pineapple juice
- 1⁄4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1⁄2 teaspoon ground ginger
- Salt and pepper to taste
- Optional: fresh cilantro for garnish
Instructions
1. Begin by marinating the chicken breasts. In a bowl, mix the pineapple juice, soy sauce, honey, olive oil, garlic powder, onion powder, ground ginger, salt, and pepper.
2. Place the chicken breasts in a sealable plastic bag or a shallow dish and pour the marinade over them. Ensure all the chicken pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight.
3. Remove the chicken from the fridge about 15 minutes before cooking to allow them to come to room temperature.
4. Preheat your Blackstone griddle to medium-high heat.
5. Once hot, lightly oil the griddle surface and place the marinated chicken breasts on it.
6. Cook the chicken for about 6-7 minutes on each side, or until they are nicely browned and cooked through (internal temperature should reach 165°F / 74°C).
7. While the chicken is cooking, add the pineapple chunks to the griddle, cooking them for 2-3 minutes on each side until they are caramelized and warmed through.
8. Once everything is cooked, remove the chicken and pineapple from the griddle.
9. Allow the chicken to rest for a few minutes before slicing.
10. Serve the chicken topped with the caramelized pineapple chunks. Garnish with fresh cilantro if desired.
