Description

A vibrant, zesty salad combining black beans, corn, and fresh veggies in a lime vinaigrette. Perfect for quick gatherings or healthy eating!


Ingredients

2 cans (15 oz/425g) black beans, rinsed and drained
1 can (15 oz/425g) sweet corn, drained
1 cup (150g) cherry tomatoes, halved
1 red bell pepper, diced
1/2 red onion, finely chopped
1/4 cup (15g) fresh cilantro, chopped
2 tbsp lime juice
1 tbsp olive oil
1 clove garlic, minced
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp ground cumin
1/4 tsp black pepper


Instructions

In a large bowl, combine black beans, corn, cherry tomatoes, red bell pepper, and red onion.
In a small bowl, whisk lime juice, olive oil, garlic, red pepper flakes, salt, cumin, and black pepper
Pour dressing over salad mixture.
Mix well, then stir in cilantro.
Chill for at least 30 minutes before serving.

Notes

Dressing can be prepared up to 1 day ahead.
Add avocado for extra richness if desired.
Substitute parsley for cilantro if needed.
Store in airtight container for up to 3 days.
