Description

This Bisquick Chicken and Dumplings recipe is a quick, hearty one-pot meal packed with tender chicken, fluffy dumplings, and a rich, savory broth. Perfect for busy nights!

Ingredients

Scale
  • 2 cups cooked chicken – shredded or diced
  • 4 cups chicken broth – low sodium preferred
  • 2 celery stalks – diced
  • 2 carrots – diced
  • 1 onion – chopped
  • 2 cloves garlic – minced
  • 1 teaspoon thyme – dried or fresh
  • 1 bay leaf – whole
  • 1 cup peas – optional
  • 1 cup corn – optional
  • Dumplings:
  • 2 cups Bisquick mix – or homemade baking mix
  • ⅔ cup milk – warmed
  • 1 tablespoon dried parsley – optional
  • ½ teaspoon black pepper – adjust to taste

Instructions

1. Sauté onions, celery, and carrots.

2. Add garlic, cook for 30 seconds.

3. Pour in broth, add seasonings and chicken.

4. Mix Bisquick, milk, parsley, and pepper in a bowl to form dumpling dough.

5. Drop spoonfuls of dough into the simmering broth.

6. Cover and cook for 15 minutes without lifting the lid.

7. Check dumplings for doneness by inserting a toothpick—it should come out clean.

8. Adjust seasoning if needed and let the soup rest for 5 minutes before serving.

Notes

You can use leftover rotisserie chicken to save time.

Add frozen peas or corn for extra color and nutrition.

Do not lift the lid while the dumplings are steaming to ensure they cook properly.

For extra richness, add a splash of cream or a pat of butter before serving.
