A vibrant, sweet, and savory chicken salad featuring honey-glazed chicken, crispy bacon, tender romaine, creamy avocado, and tangy blue cheese. Perfect for gatherings or quick meals, it balances texture and bold flavors with a hint of summer freshness.


Ingredients

1/3 cup honey
1/4 cup Dijon mustard
2 tablespoons olive oil
2 cloves garlic, minced
1 1/2 teaspoons salt
1 teaspoon ground black pepper
4 boneless, skinless chicken thighs
1/4 cup apple cider vinegar
1/2 cup red onion, sliced
4 slices halal bacon, cooked and crumbled
1/2 cup blue cheese, crumbled
4 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 large avocado, pitted and sliced


Instructions

Combine honey, Dijon mustard, olive oil, garlic, salt, and pepper in a bowl to make the dressing.
Reserve half of the dressing to use as a baste for the chicken.
Place the chicken thighs in a baking dish and brush with the reserved dressing.
Broil for 8-12 minutes, turning once, until golden and caramelized.
In a large bowl, toss romaine, red onion, cherry tomatoes, and avocado with the remaining dressing.
Top the salad with cooked chicken, crumbled halal bacon, and blue cheese. Serve immediately.

Notes

Bacon can be substituted with pan-fried tempeh or crispy chickpeas for a vegetarian version.
For a richer dressing, add 1 tablespoon mayonnaise to the honey-mustard mixture.
The chicken can be cooked in an oven instead of broiled for a slightly different texture.
