This Ground Turkey Soup is a light, healthy, and flavorful meal made with lean turkey and fresh vegetables. Perfect for a quick weeknight dinner, it’s easy to customize with your favorite grains or veggies.
Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 4 cups chicken broth (or vegetable broth)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup frozen peas (optional)
- 1 cup cooked pasta or rice (optional)
- Fresh parsley for garnish (optional)
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned, breaking it apart with a spoon. Season with a pinch of salt and pepper. Remove the turkey from the pot and set aside.
2. In the same pot, add chopped onion, garlic, carrots, celery, and zucchini. Sauté for 5–7 minutes, until the vegetables begin to soften.
3. Add the diced tomatoes (with juice) and chicken broth. Stir to combine and bring to a simmer.
4. Stir in dried thyme, oregano, salt, and pepper to taste. Let the soup simmer for 15–20 minutes, until vegetables are tender.
5. Return the cooked turkey to the pot. If desired, add frozen peas and cooked pasta or rice. Simmer for an additional 5–10 minutes to let the flavors meld.
6. Serve hot, garnished with fresh parsley if desired.
Notes
This soup is great for meal prep and freezes well.
For a low-carb option, omit the pasta or rice.
You can also substitute other vegetables like spinach, kale, or bell peppers based on what you have on hand.
