Description

This comforting and hearty soup is a one-pot wonder that mimics the flavors of classic cabbage rolls without the tedious rolling process. By combining lean ground beef with fresh cabbage and savory fire-roasted tomatoes, this meal offers a nutritious, budget-friendly, and satisfying dinner that comes together quickly, making it a perfect solution for busy weeknights.

Ingredients

Scale

2 lbs lean ground beef
1–2 Tbsp olive oil or avocado oil
3 cloves garlic, minced
1 yellow onion, chopped
2 quarts beef broth or beef stock
1 small head of fresh cabbage, chopped into bite-sized pieces
2 cans (14.5 oz each) diced fire-roasted tomatoes, undrained
2 Tbsp Worcestershire sauce (ensure alcohol-free/halal)
Salt and black pepper to taste

Instructions

Heat a large soup pot or Dutch oven over medium-high heat with the oil.
Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
Stir in the chopped onion and minced garlic, sautéing until the onion is translucent.
Pour in the beef broth and the undrained fire-roasted tomatoes.
Add the chopped cabbage and the Worcestershire sauce to the pot.
Bring the mixture to a boil, then reduce the heat to a simmer.
Cover and simmer for about 20 minutes, or until the cabbage is tender.
Season with salt and black pepper to taste before serving.

Notes

You can add extra vegetables like carrots or celery to boost the nutrition profile. Store leftovers in an airtight container in the refrigerator for up to 3 days. This soup also freezes exceptionally well for future meals.
