2 cups sushi rice, rinsed
1 cup water or broth for cooking rice
1/4 cup rice vinegar
2 tbsp sugar
1 tsp sesame oil
12 large shrimp, peeled and deveined
2 tsp soy sauce
1 tsp cornstarch
1/2 cup sliced avocado
1/2 cup julienned cucumber
1/4 cup shredded carrots
10 seaweed crisps
1/4 cup mayonnaise
1 tbsp sriracha
Sesame seeds for garnish
Pickled radishes for garnish


Instructions

Rinse sushi rice until water runs clear; cook with 1 cup water in a rice cooker or pot
In a small bowl, mix rice vinegar, sugar, and sesame oil to make sushi rice seasoning
Once rice is cooked, stir in seasoning while hot
Heat olive oil in a pan; season shrimp with soy sauce and cornstarch, then cook 1-2 minutes per side until golden
Layer seasoned rice in a bowl
Top with cooked shrimp, sliced avocado, cucumber, carrots, seaweed crisps
Drizzle with mayonnaise and sriracha mixture
Sprinkle sesame seeds and pickled radishes for garnish
