2 pounds potatoes, such as Russet or Yukon Gold, cut into bite-sized chunks
1 large green cabbage, cored and chopped
1 can (15 ounces) white beans, like Great Northern or Cannellini, drained and rinsed
1 can (15 ounces) diced tomatoes
6 cups vegetable broth, low-sodium


Instructions

Heat olive oil in a large pot over medium heat.
Add the onion, carrot, and celery; sauté until softened, about 5-7 minutes.
Stir in the garlic, sage, thyme, salt, and pepper, cooking for another minute until fragrant.
Add the potatoes, cabbage, tomatoes with their juices, and vegetable broth.
Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes or until potatoes are tender.
Stir in the white beans and simmer for an additional 5 minutes to heat through.
Remove bay leaves before serving and adjust seasoning to taste.

Notes

This soup keeps well in the refrigerator for up to 4 days and actually tastes better the next day as the flavors meld. You can freeze it for up to 3 months. If the soup becomes too thick after storing, add a splash of vegetable broth when reheating.
