  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 1 tablespoon vegetable oil
  • 6 large flour tortillas (burrito size)
  • Optional toppings: guacamole, salsa, hot sauce

Instructions

1. Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spoon, until browned and fully cooked.

2. Drain excess grease from the skillet to prevent the burritos from becoming soggy.

3. Add chopped onion and cook for 5–7 minutes until softened. Stir in minced garlic and cook for another minute.

4. Sprinkle taco seasoning over the beef mixture. Add water and stir to combine. Simmer for 5–10 minutes until thickened.

5. Stir in black beans, corn, and undrained diced tomatoes and green chilies. Reduce heat and simmer for another 5–10 minutes to meld flavors.

6. In a separate bowl, mix cooked rice with shredded cheddar and Monterey Jack cheese.

7. Warm the flour tortillas using your preferred method—microwave, oven, or dry skillet.

8. To assemble, lay a tortilla flat and add about 1/2 cup of the beef mixture in the center. Top with 1/4 cup of the rice and cheese mixture.

9. Add a tablespoon of sour cream and a sprinkle of chopped cilantro over the filling.

10. Fold in the sides, then roll the tortilla tightly from the bottom to form a burrito. Repeat with remaining ingredients.

11. (Optional) Heat a large skillet over medium heat. Place burritos seam-side down and cook for 2–3 minutes per side until golden brown and crispy.
