Ingredients

  • 2 slices Bacon slices (freeze 30 min for easier cutting)
  • 3 medium Golden potatoes, washed and diced into ½-inch cubes
  • 2 tablespoons Olive or avocado oil
  • Salt, pepper & Old Bay seasoning to taste
  • 12 cloves Garlic cloves, minced
  • 1 tablespoon Pure maple syrup
  • Parsley or chives, fresh (optional garnish)

Instructions

1. Freeze bacon for 30 minutes for easier slicing. Cut into bite-size pieces with kitchen shears.

2. Wash and dry potatoes. Dice into ½-inch cubes and soak in cold water to prevent browning and remove excess starch.

3. Heat oil in a large skillet over medium-high. Drain potatoes and add to hot oil. Season with salt, pepper, and Old Bay. Cook for 10 minutes, stirring often, until golden.

4. Add bacon pieces. Cook for 5–6 minutes until crispy and potatoes are further browned.

5. Stir in minced garlic. Cook for 1–2 minutes until fragrant, avoiding burning.

6. Drizzle with maple syrup and toss to coat. Cook for another minute to let syrup caramelize.

7. Garnish with fresh herbs and serve hot with eggs, pancakes, or brunch mains.

Notes

Make it plant-based by using smoked tofu or coconut bacon. Swap in sweet potatoes for a sweeter take. For gluten-free, double-check seasoning blends like Old Bay.
