Ingredients
1 lb shrimp, peeled and deveined
1.5 cups jasmine rice, uncooked
2 cups shredded green cabbage
1 cup diced tomatoes
1/4 cup chopped green onions
1/4 cup mayonnaise
2 tbsp sriracha
2 tbsp rice vinegar (or lime juice)
1 tbsp honey
1 tsp chili flakes (adjust to taste)
1 tsp sesame oil
2 tbsp cooking oil (for frying)
Salt and pepper to taste
Instructions
Cook rice according to package instructions.
Pat shrimp dry, season with salt and pepper, then fry in 2 tbsp oil until golden (3-4 minutes per side). Set aside.
Combine mayonnaise, sriracha, rice vinegar, honey, chili flakes, and sesame oil for the sauce.
In a bowl, layer cooked rice, fried shrimp, cabbage, tomatoes, and green onions. Drizzle with sauce. Mix and serve.
Notes
For extra crunch, add water chestnuts or bell peppers.
Use gluten-free mayonnaise if avoiding gluten.
Store leftovers in an airtight container for up to 2 days.
