Ingredients
1 lb 92% lean ground turkey
1 cup broccoli florets
1/2 cup julienned carrots
1/2 red bell pepper, sliced
2 cups cooked jasmine rice
4 tbsp mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha
1 tbsp soy sauce (low sodium, if preferred)
1 lime (juiced)
1 scallion, sliced
1 tbsp sesame oil
1 garlic clove, minced
1 tsp sugar
Instructions
Preheat oven to 350°F (180°C)
Cook rice according to package instructions
In a large pan, heat 1 tbsp sesame oil. Sauté garlic, then cook ground turkey until browned
Add broccoli, carrots, and bell pepper. Sauté 5 minutes until tender-crisp
Make Bang Bang sauce: whisk mayo, chili sauce, sriracha, soy sauce, lime juice, sugar, and 1 tsp sesame oil
Divide rice into bowls. Top with turkey-vegetable mix, drizzle sauce, sprinkle scallions, and serve
Notes
Use pre-cooked rice for quicker assembly
Add chopped peanuts or sesame seeds for crunch
Substitute frozen mixed vegetables if fresh is unavailable
