Description

This delicious casserole features tender mushrooms in a creamy cheese sauce, topped with a buttery breadcrumb crust. Perfect as a comforting side dish or a vegetarian main course, it combines cheddar and Parmesan for a rich, cheesy flavor.

  • 1 lb button mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 tbsp unsalted butter, melted
  • 1/2 cup breadcrumbs (optional)
  • Fresh parsley, chopped, for garnish

Instructions

1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. In a bowl, toss the sliced mushrooms with olive oil, garlic powder, thyme, salt, and pepper until well coated.

3. Spread the mushroom mixture evenly in the prepared baking dish.

4. Sprinkle the shredded cheddar and grated Parmesan over the mushrooms.

5. Pour the heavy cream evenly over the entire dish.

6. In a separate bowl, mix the melted butter with breadcrumbs until well combined. Sprinkle this mixture over the top of the casserole.

7. Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the sauce is bubbling.

8. Optionally, broil for an additional 2-3 minutes to achieve an extra crispy topping.

9. Let the casserole rest for a few minutes before garnishing with chopped parsley and serving.

Notes

For a lower-carb version, omit the breadcrumbs or replace them with crushed nuts.
