Description

Celebrate the harvest season with this vibrant, nutrient-dense Autumn Salad. Featuring tender roasted sweet potatoes seasoned with cinnamon and cayenne, crisp kale, and refreshing apple slices, this bowl is perfectly balanced by a savory-sweet maple miso vinaigrette. It is a hearty, crowd-pleasing dish that makes a perfect healthy lunch or an impressive side for festive gatherings, all while being incredibly easy to prepare.

Ingredients

Scale

3 cups peeled and cubed sweet potatoes
1 tablespoon olive oil
2 teaspoons maple syrup
1/2 teaspoon ground cinnamon
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1 bunch lacinato kale, stemmed and chopped
2 cups baby arugula
1 crisp apple, thinly sliced
1/4 cup pomegranate arils
1/4 cup pumpkin seeds
2 tablespoons olive oil (for dressing)
1 tablespoon apple cider vinegar
1 tablespoon pure maple syrup
1 teaspoon white miso paste
1 teaspoon Dijon mustard

Instructions

Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with 1 tablespoon olive oil, 2 teaspoons maple syrup, cinnamon, cayenne, and salt on a baking sheet.
Roast for 25-30 minutes until tender and caramelized, turning halfway through.
In a large bowl, place the stemmed kale and drizzle with a little olive oil, massaging it with your hands until softened.
Whisk together the olive oil, apple cider vinegar, maple syrup, miso paste, and mustard in a small bowl until emulsified.
Add the arugula, roasted sweet potatoes, and apple slices to the massaged kale.
Drizzle the dressing over the salad and toss gently to coat.
Top with pomegranate arils and pumpkin seeds before serving.

Notes

Massage the kale thoroughly to ensure it is tender and easy to digest. You can roast the sweet potatoes up to two days in advance for faster meal prep. If you prefer extra crunch, lightly toast the pumpkin seeds in a dry pan for a few minutes before adding them to the salad.
