Description

Welcome the cooler weather with this nutrient-dense Autumn Harvest Bowl. Featuring earthy wild rice, caramelized cinnamon-roasted sweet potatoes, and crisp apple slices, this dish is a warm, satisfying meal. A sophisticated browned butter vinaigrette ties the textures together, creating a bowl that is perfect for a cozy weeknight dinner or easy meal prep. It is a wholesome, balanced dish that celebrates the vibrant flavors of the fall season in every colorful bite.

Ingredients

Scale

4 cups kale, stemmed and chopped
1 cup wild rice, rinsed well
1 large sweet potato, peeled and diced into 1/2 inch cubes
1 tbsp olive oil
1 tsp cinnamon
1/2 tsp salt
1 Honeycrisp apple, thinly sliced
1/4 cup parmesan cheese, freshly grated
2 tbsp unsalted butter
1 tbsp shallot, finely minced
1 tsp balsamic vinegar
1 tsp pure maple syrup
1/2 tsp dijon mustard

Instructions

Preheat your oven to 425°F.
Toss the diced sweet potatoes with olive oil, cinnamon, and salt on a baking sheet and roast for 20-25 minutes until tender and caramelized.
While potatoes roast, cook the wild rice according to package instructions until tender and chewy.
Prepare the dressing by heating butter in a small pan over medium heat until it turns light brown and smells nutty, then stir in the minced shallot, balsamic vinegar, maple syrup, and dijon mustard.
In a large bowl, massage the kale to soften it.
Assemble the bowls by layering the cooked wild rice, roasted sweet potatoes, sliced apples, and kale.
Drizzle the warm browned butter vinaigrette over the top and garnish with freshly grated parmesan cheese.

Notes

Ensure you rinse the wild rice thoroughly to remove any excess starch. For extra protein, feel free to add chickpeas or grilled chicken. Store components separately in the refrigerator for up to 3 days to keep the greens fresh.
