1 pound ground beef (90/10 lean)
1 medium white onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
1 can (28 oz) diced tomatoes
2 cups beef or vegetable broth
Toppings: shredded cheese, sour cream, cilantro, avocado cubes


Instructions

Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground beef and cook until browned, breaking it apart with a spoon.
Stir in the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and taco seasoning, stirring for 1 minute until fragrant.
Pour in the tomatoes, beans, and broth, stirring well to combine.
Bring the mixture to a gentle boil, then reduce heat to low and simmer for 15-20 minutes to allow flavors to meld.
