Description

This vibrant, warm potato salad swaps the heavy mayonnaise of traditional versions for a bright, tangy vinaigrette. Featuring tender red potatoes, crispy turkey bacon, and a savory bite of red onion, this dish delivers comforting rustic flavors in just 25 minutes. It is the perfect, crowd-pleasing side for barbecues or busy weeknight dinners, offering a delicious balance of smoky, sweet, and acidic notes without any heavy ingredients.

Ingredients

Scale

2 pounds small red or yellow potatoes, scrubbed and quartered
4 slices nitrate-free turkey bacon, diced
1 red onion, finely diced
1/3 cup apple cider vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
2 tablespoons olive oil
Salt and freshly cracked black pepper to taste
Fresh parsley, chopped for garnish

Instructions

Place the quartered potatoes in a large pot and cover with salted water; bring to a boil and cook for 10-12 minutes until fork-tender.
While potatoes boil, cook the diced turkey bacon in a large skillet over medium-high heat until crispy; remove the bacon with a slotted spoon but keep the fat in the pan.
Add the diced red onion to the skillet with the turkey bacon fat and sauté for 3-4 minutes until softened.
Whisk in the apple cider vinegar, maple syrup, and Dijon mustard into the skillet, scraping up any brown bits; cook for 1 minute.
Drain the potatoes and immediately add them to the skillet with the dressing.
Stir gently to coat the potatoes, folding in the crispy turkey bacon.
Season with salt and pepper to taste and garnish with fresh parsley before serving warm.

Notes

Ensure you keep the skins on the potatoes for extra texture and nutritional value. This salad is best served warm to allow the vinaigrette to penetrate the potatoes, but it also holds up well at room temperature for potlucks.
