Description

A creamy, tangy chicken salad made with pre-cooked rotisserie chicken, crisp veggies, and a zesty dressing. Ready in 15 minutes, this quick, satisfying dish is perfect for weeknights or picnics.


Ingredients

6 cups shredded rotisserie chicken (about 2 lbs)
2/3 cup mayonnaise
1 cup chopped celery
1/2 cup finely diced red onion
1/4 cup chopped fresh parsley
1 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey (optional)
salt and pepper to taste


Instructions

Shred the rotisserie chicken, discarding bones and skin.
In a large bowl, combine mayonnaise, lemon juice, Dijon mustard, and honey (if using).
Stir in celery, red onion, and parsley.
Mix in the shredded chicken until evenly coated.
Season with salt and pepper to taste.
Chill for 15 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
Add chopped apples or grapes for a sweet-tangy twist.
For a lighter version, substitute Greek yogurt for half the mayonnaise.
